medium-sized sole, filleted 1 oz. seedless raisins 1/2 oz. almonds finely
chopped Salt, pepper and lemon juice Egg and breadcrumbs 3 tablespoons
chutney Oil for frying

Trim the fillets and sprinkle with salt, pepper and lemon juice. 2. Mix the
chutney, raisins and almonds, spread evenly on each fillet. 3. Roll up, sprinkle
with flour, coat with egg and breadcrumbs. 4. Fry in deep oil until golden
brown and serve with maitre d'hotel butter or hollandaise sauce
